A specialty of the Gurage people of central Ethiopia. Freshly minced, very lean beef mix with with mitmita and butter. Kitfo is traditionally served raw, like steak tartar, or lebleb (very rare). The butter has special herbs(koseret) that give it a distinctive flavour
